How to make:
Take the following items.
- NatureMills Sambar Powder
- Toor dal (split pigeon peas), washed and soaked
- Mixed vegetables (such as carrots, beans, eggplant, okra, etc.), chopped
- Tamarind pulp or tamarind paste
- Onion, chopped
- Tomato, chopped
- Green chilies, slit
- Curry leaves
- Mustard seeds
- Turmeric powder
- Salt to taste
- Oil or ghee for tempering
- Coriander leaves, chopped (for garnish)
Instructions:
1. Prepare the Lentils:
Cook the soaked toor dal with enough water until it's soft and easily mashable. You can cook it on the stovetop or in a pressure cooker.
2. Tamarind Pulp:
In a bowl, soak tamarind in warm water for a few minutes. Squeeze and extract the tamarind pulp. If using tamarind paste, dilute it in water.
3. Boil Vegetables:
Boil the chopped mixed vegetables until they are partially cooked. You can also sauté them in a little oil for added flavor before boiling.
4. Start Tempering:
Heat oil or ghee in a pot. Add mustard seeds and let them splutter. Add curry leaves, and slit green chilies. Stir briefly.
5. Add Onions and Tomatoes:
Add chopped onions and sauté until they turn translucent. Then, add chopped tomatoes and cook until they become soft and mushy.
6. Add Sambar Powder and Turmeric:
Add NatureMills Sambar Powder and turmeric powder. Sauté for a minute to release the flavors of the spices.
7. Add Tamarind Pulp:
Pour in the tamarind pulp (or diluted tamarind paste). Let the mixture simmer for a few minutes to allow the flavors to blend.
8. Add Boiled Vegetables:
Add the partially cooked vegetables to the pot and stir well to coat them with the spices.
9. Add Cooked Lentils:
Mash the cooked toor dal and add it to the pot. Stir to combine with the vegetables and spices.
10. Adjust Consistency:
Add water to achieve your desired consistency. Sambar is typically a medium-thick stew.
11. Season and Simmer:
Add salt to taste and let the sambar simmer for about 10-15 minutes, allowing all the flavors to meld together.
12. Garnish and Serve:
Once the sambar is cooked to your satisfaction, garnish with chopped coriander leaves.
13. Serve:
Serve the sambar hot with steamed rice, dosa, idli, or other South Indian dishes.
